Season: In a bowl, toss chicken with olive oil, ranch seasoning, garlic powder, paprika, and black pepper. If using brown sugar, sprinkle it in and toss again until coated.
Wrap with bacon: Cut bacon slices into thirds. Wrap each chicken cube with a piece of bacon and secure with a toothpick if needed.
Place seam side down for best results.
Preheat the air fryer: Set to 390°F (200°C) for 3 minutes. A hot basket helps the bacon crisp quickly.
Load the basket: Arrange bites in a single layer with space between them. Do not overcrowd.
Work in batches if necessary.
Air fry: Cook for 9–12 minutes, flipping halfway. Time varies by air fryer and bacon thickness. You’re aiming for 165°F internal temperature and crisp bacon.
Finish and rest: Let bites rest for 2 minutes to lock in juices.
Remove toothpicks, if used.
Serve: Sprinkle with chopped chives or parsley. Serve hot with ranch, honey mustard, or your favorite dip.
