Ingredients
  

  • Chicken: 1.5 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • Bacon: 8–10 slices thin-cut bacon, cut into thirds
  • Ranch seasoning: 2 tablespoons dry ranch mix (store-bought or homemade)
  • Olive oil: 1–2 teaspoons, for light coating
  • Garlic powder: 1/2 teaspoon
  • Paprika: 1/2 teaspoon (smoked or sweet)
  • Black pepper: 1/4 teaspoon
  • Brown sugar (optional): 1 teaspoon for a hint of sweet-savory glaze
  • Toothpicks: Optional, for securing bacon around chicken pieces
  • Dipping sauces: Ranch dressing, honey mustard, buffalo sauce, or barbecue
  • Fresh herbs (optional): Chives or parsley for garnish

Method
 

  1. Prep the chicken: Pat the chicken dry with paper towels. Cut into even 1-inch cubes for consistent cooking.
  2. Season: In a bowl, toss chicken with olive oil, ranch seasoning, garlic powder, paprika, and black pepper. If using brown sugar, sprinkle it in and toss again until coated.
  3. Wrap with bacon: Cut bacon slices into thirds. Wrap each chicken cube with a piece of bacon and secure with a toothpick if needed. Place seam side down for best results.
  4. Preheat the air fryer: Set to 390°F (200°C) for 3 minutes. A hot basket helps the bacon crisp quickly.
  5. Load the basket: Arrange bites in a single layer with space between them. Do not overcrowd. Work in batches if necessary.
  6. Air fry: Cook for 9–12 minutes, flipping halfway. Time varies by air fryer and bacon thickness. You’re aiming for 165°F internal temperature and crisp bacon.
  7. Finish and rest: Let bites rest for 2 minutes to lock in juices. Remove toothpicks, if used.
  8. Serve: Sprinkle with chopped chives or parsley. Serve hot with ranch, honey mustard, or your favorite dip.
