High Protein Ground Turkey Fried Rice - Fast, Flavorful, and Satisfying

Ingredients
  

  • Ground turkey: 1 pound (93% lean is a nice balance of flavor and leanness)
  • Cooked, chilled rice: 4 cups (preferably day-old jasmine or long-grain)
  • Eggs: 3 large
  • Vegetables: 1 cup frozen peas and carrots, 1 red bell pepper (diced), 4 green onions (sliced)
  • Aromatics: 3 cloves garlic (minced), 1 tablespoon fresh ginger (minced or grated)
  • Soy sauce or tamari: 3–4 tablespoons (to taste)
  • Sesame oil: 1–2 teaspoons
  • Neutral cooking oil: 2–3 tablespoons (avocado, canola, or peanut oil)
  • Rice vinegar: 1 tablespoon
  • Optional boosters: 1–2 tablespoons oyster sauce or hoisin, 1 teaspoon chili-garlic sauce or sriracha, white pepper, sesame seeds, lime wedges
  • Salt and black pepper: To taste

Method
 

  1. Prep everything first. Cold rice ready? Veggies chopped? Garlic and ginger minced? Keep ingredients within arm’s reach. Fried rice moves fast, so set up your station before turning on the heat.
  2. Heat your pan. Place a large skillet or wok over medium-high heat. Add 1 tablespoon oil and let it shimmer.
  3. Scramble the eggs. Pour in beaten eggs with a pinch of salt. Scramble until just set, then transfer to a plate. Don’t overcook; they’ll return to the pan later.
  4. Brown the turkey. Add another tablespoon of oil. Crumble in the ground turkey, season with a pinch of salt and black pepper, and cook until browned with crisp edges, about 6–8 minutes. Break it into small bits for even texture.
  5. Add aromatics. Push turkey to the side. Add a little more oil if the pan looks dry. Sauté garlic and ginger for 30–45 seconds until fragrant, then mix into the turkey.
  6. Cook the vegetables. Add peas, carrots, and bell pepper. Stir-fry 2–3 minutes until crisp-tender. If using frozen veggies, no need to thaw—just cook off the chill.
  7. Add the rice. Increase heat to high. Add the chilled rice, breaking up clumps with a spatula. Spread it out and let it sit for 30–60 seconds at a time to get some toasty bits before stirring.
  8. Season the base. Drizzle in soy sauce (start with 3 tablespoons), rice vinegar, and optional oyster/hoisin sauce. Toss well to coat every grain. Adjust soy to taste.
  9. Finish with eggs and aromatics. Return scrambled eggs and fold in green onions. Add sesame oil and a pinch of white pepper if you have it. Taste and tweak salt, soy, or heat (chili-garlic sauce) as needed.
  10. Serve hot. Garnish with extra green onions or sesame seeds. A squeeze of lime brightens everything up.
